Chicken slaw with thyme pesto

Super easy, nutritious and delicious.

1 bog of organic slaw

1 cup of diced organic chicken, cooked

1 lime, juiced

1/2 teaspoon kelp flakes

Pinch of sea salt

1/2 cup of thyme pesto (see recipe in sauces and marinades)

Marinate the slaw in the lime, salt and kelp flakes overnight. The next day combine all ingredients and enjoy.

Carrot and sprout salad

Doesn’t get much easier than this!

1 cup of grated carrots

1 /2 cup of sprouts

1 tablespoon of pumpkin seeds

kelp flakes

sea salt

Mix the ingredients together in a bowl, drizzle with olive oil and sprinkle with salt or head to the section on sauces and marinades and find my most favorite dressing ever-basil and green apple!

Cannellini Bean with crispy pancetta and vegetables

In case you missed it, I clearly love cannellini beans. If you want to make this vegan this omit the pancetta.

1 cup of cannellini beans drained

1 cup of sprouts chopped

1/2 diced tomato

1 4 oz packet of pancetta, cooked til crispy

1/3 cup of chopped fennel

Mix together in a bowl then add the magical, mystical salad dressing (recipe in sauces and marinades). So delicious and nutritious.
